Is Ramen gluten-free?

Traditional Ramen contains gluten. There are several gluten-free version available these days made with rice, millet, and potato. Check the packaging to ensure the Ramen is Gluten-free certified. 

This recipe uses Gluten-Free Ramen made from Brown Rice and Millet.

  1. Microwave the Sweet Potatoes as you set the water to boil for Ramen. 
  2. Use Garlic powder and red chilli flakes to save time in chopping garlic and green chillies.

Ingredients
  

  • 1 lb Firm Tofu Gluten-free
  • 1 medium Sweet Potato
  • 1 cup Frozen Peas
  • 1 Long Sweet Chili Pepper
  • 1 tbsp Red Chilli flakes
  • 1 tsp Soy Sauce Gluten-free
  • 1 tsp Rice Vinegar Gluten-free
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 3 Cakes Millet and Brown Rice Ramen Gluten-free
  • 1 tbsp Sesame Oil

Instructions
 

Preparation

  • Microwave the Sweet Potato for 2 minutes or until a little soft. Peel and dice the sweet potato into cubes.
  • Slice off the stem of the long chilli pepper and remove the seeds. Chop the long chilli pepper into roughly 1/2 inch pieces.

  • Wash and soak a cup of frozen peas in hot water.
  • Remove water from the Tofu and cut it into approximately 1/2 inch cubes.

Cooking Ramen

  • I used Millet and Brown Rice Ramen Noodles from Lotus Foods for this recipe. Bring about 4-5 cups of water to a boil and add the Ramen cakes. After about 1 minute, start separating the noodles gently with a fork and reduce heat to low. Cook for 3-4 minutes or until the noodles are just soft. Strain and rinse with cold water to avoid sticking.

Magical Saute

  • In a wok on medium heat, add the sesame oil, stir in the cubed sweet potatoes. Add half of the salt and then stir in the cubed tofu. Saute for about 2 minutes.

  • Add the soy sauce, vinegar and garlic powder. Stir for about 1 minute, taking care not to break the tofu pieces.
  • Add in the chopped chilli pepper and strained peas. Add 3/4 cup hot water and a quick taste test for salt.

  • Add in the cooked Ramen. Mix in Red chilli Flakes for a spicy kick. Your scrumptious wholesome Gluten-free Tofu Ramen dinner is ready. Enjoy!
