This Roasted Veggies recipe is a true gift for your body. It is a delicious bouquet of nutrients from sweet potatoes, carrots, chilli peppers and onions.

Vegetables
- 2 Medium Sweet Potatoes
- 1 Large Potato
- 1 Medium Red Onion
- 1 Medium Tomato
- 2 Medium Carrots
- 2 Long Chilli Peppers
Seasoning
- 1 tbsp Dried Fenugreek Leaves
- 1 tsp Coriander Powder
- 1 tsp Red Chilli Powder
- 1 tsp Salt
- 1 tbsp Garlic Powder
- 1½ tbsp Vegetable Oil
Vegetable Preparation
Wash all the vegetables thoroughly. Peel the sweet potatoes (Pic#1) and the potato (Pic#2)
Chop the potatoes and sweet potatoes into about 1/2 inch cubes. (Pic#3)
Peel and chop the carrots also into about 1/2 inch cubes. (Pic#4)
Chop the onions into about 3/4 inch size and the Chilli peppers. (Pic #5)
Transfer the chopped veggies onto a large dish. (Pic#6)
Seasoning
Add garlic powder, red chilli powder, coriander powder, salt and fenugreek leaves into the dish. (Pic#8)
Add in the oil, thoroughly mix together, making sure the veggies get coated evenly. (Pic#9)
Transfer the seasoned veggies onto a Baking tray brushed with vegetable oil and add in chopped coriander. (Pic#10)
Cooking
Turn on the oven to Broil High setting.
Place the tray in the middle rack of the oven and set a timer for 12 minutes. Check after 10 minutes if the vegetables turn crispy, you can flip the vegetables. (Pic#11)
Cook for another 6-8 minutes. (Pic #12)
Turn off the oven and take out the tray. Enjoy!
