This Apple Cinnamon Muffins recipe with grated fresh juicy apples and the warm, sweet, and woody flavor of cinnamon is my favorite way to welcome fall. Ready in just 30 minutes, this recipe will give any store a run for their money.
What kind of Apples to Choose for baking Apple Cinnamon Muffins?
Apples that are crisp and have a hint of tartness are the best for baking Apple Cinnamon muffins. In this recipe, I have used Gala apples. You may also use Honeycrisp, or Pink Lady or any other fresh seasonal variety available in the grocery store near you.
I highly recommend grating the apples for this recipe with their skin on as this gives a nice bite to the muffin. I have also tried making this recipe with diced apples but my family prefers the texture with grated apples.

The use of fat in baking is essential to get the right texture – flaky yet not dry, tender with a rich flavor. Cream cheese is a better option than butter as it has lower saturated fat content when compared with butter and a much higher protein content. I like to experiment switching butter with vegetable oil in baked goods. In this Gluten-Free Apple Cinnamon Muffin recipe, I got the best results with cream cheese.
What Ingredients do I need to make Apple Cinnamon Gluten-Free Muffins?
Ingredients:
1 cup gluten-free sorghum flour (Jowar)
1/2 cup roasted gram flour (aka Sattu)
1.5 tsp baking powder
1/4 tsp salt
1/3 cup granulated white sugar
1/4 cup brown sugar
1 tsp cinnamon powder
2 cups grated apples (3 Medium apples)
1/2 cup cream cheese (at room temperature)
2 large eggs (at room temperature)
1 tsp Pure Vanilla extract
Cinnamon Sugar topping
2 tsp white sugar
1 tsp cinnamon powder
Step By Step Process - Make the Batter
Dry Mixture
- In a mixing bowl, sift together the flours (sorghum and roasted gram flour), salt, baking powder, and cinnamon powder. (Pic#1)
- In another bowl, using a food processor/ grater, grate the apples with skin. (Pic#2)
- Add brown sugar to the grated apples and mix well. (Pic#3)
- In another bowl, crack the eggs, add in vanilla extract, and whisk well. (Pic#4)
- Add in white sugar and whisk until well combined. (Pic#5)
- Add in the cream cheese to the mixture and mix. (Pic#6)
- Add the flour mixture into the wet mix in three batches (Pic#7). Make sure the flour is incorporated well before adding in the next batch.
- To this mix, add in the apple mixture (Pic#8). Make sure the apple mix is incorporated well into the batter.
- Optional: Fold in sliced almonds/ pecans/ nuts of your choice. (Pic#9)
Step by Step Process: Prepare for Baking
Cinnamon Sugar
- Mix 2 tablespoons of white granulated sugar and 1 tablespoon of powdered Cinnamon. Set aside. (Pic#10)
Oven
Preheat the oven temperature to 375 deg F.
Muffin Pan
- Grease the muffin pan with butter/ vegetable oil.
- Instead of store bought muffin liners, make muffin liners with parchment paper using this simple process.
- Line the muffin pan with your homemade custom liners. (Pic#11)
Spoon the batter
- Spoon the batter into the liners taking care to fill 3/4th of the height. (Pic#12)
- Sprinkle some cinnamon sugar on top of each of the muffins. (Pic#13)
- Feel free to dress up the muffins with some chopped nuts/ chocolates.
- Bake the muffins for about 20-25 minutes or until their tops are golden brown. Insert a skewer/ toothpick to check if they are done. (Pic#14)
- Turn off the oven and let the muffins stand in the oven for about 3 minutes, then place them on a wire rack to cool.
