Baking and Roasting are both techniques where the oven uses heating elements on the bottom for cooking. While baking uses moderate temperatures, roasting uses higher temperatures.
Broiling is a quick cooking technique where the oven uses the heating elements on the top. This method is great for giving a crispy-tender texture and smoky flavor to your veggies. In this recipe, I’ve used the Broil setting in my oven.

Broiling is an excellent way to enjoy vegetables without losing too many nutrients. This technique not only makes the veggies crispy-tender quickly, the dry heat cooking keeps the nutrients intact. Boiling ends up losing water soluble nutrients and turns the veggies into a mush.
How to Make Oven Roasted Veggies?
Here are a few things to consider for Roasted/ Broiled Veggie recipes:
- Type: In this recipe, I blend denser vegetables like potatoes, carrots, and sweet potato with juicier vegetables like Tomato, Onions and Chilli Peppers. This combination creates a balanced texture for the dish.
- Size: It is important to cut the vegetables into similar sizes so that their cook times are similar.
- Oil: I used oil in the marinade and also made sure the baking tray was greased with vegetable oil for the spices to be cooked with the oil and render a rich flavor.
- Broil Vs Roast: While roasting vegetables will take around 35-40 minutes, broiling cooks the vegetables much quicker, taking only around 20-25 minutes.
- Position of the Baking Tray: While Broiling, make sure the sheet pan is positioned at the center of the oven
Oven Roasted Veggies Recipe: Ingredients
Vegetables
2 Medium Sweet Potatoes
1 Large Potato
2 Carrots
2 Long Chilli Peppers
1 Medium Onion
1 Medium Tomato
Spices
1 tbsp Garlic Powder
1 tsp Coriander Powder
1 tsp Red Chilli Powder
1 tbsp Dried Fenugreek Leaves
1 tsp Salt
1.5 tbsp Vegetable Oil

OVEN ROASTED VEGGIES Recipe: Step By Step Process
Vegetable Preparation:
1. Wash all the vegetables thoroughly. Peel the sweet potatoes (Pic#1) and the potato. Chop the potato (Pic#2)


2. Chop the sweet potatoes into about 1/2 inch cubes. (Pic#3)
3. Peel and chop the carrots also into about 1/2 inch cubes. (Pic#4)
4. Chop the onions into about 3/4 inch size and the Chilli peppers. (Pic #5 & 6)
5. Transfer the chopped veggies onto a large dish.




Seasoning:
- Add garlic powder, red chilli powder, coriander powder, salt and fenugreek leaves into the dish. (Pic#8)
- Add in the oil, thoroughly mix together, making sure the veggies get coated evenly. (Pic#9)
- Transfer the seasoned veggies onto a Baking tray brushed with vegetable oil and add in chopped coriander. (Pic#10)




Cooking:
1. Turn on the oven to Broil High setting.
2. Place the tray in the middle rack of the oven and set a timer for 12 minutes. Check after 10 minutes if the vegetables turn crispy, you can flip the vegetables. (Pic#11)
3. Cook for another 6-8 minutes. (Pic #12)
4. Turn off the oven and take out the tray. Enjoy!
