How about an ice cream flavor that transports you to a beautiful flowery meadow with lavenders? I’m absolutely thrilled to share this 2-in-1 recipe – creamy Lavender Ice cream and oat milk shake using Lavender extract and Maple Syrup that can double up as a dessert or a floral morning smoothie!
Can I use fresh lavender instead of lavender extract?
Absolutely! I’ve used lavender extract in this recipe as it is quick and convenient. However, if you have access to fresh or dried lavender, I’ll recommend using dried lavender flowers. Dried lavender flowers have more intense flavor. This natural herb can vary in intensity so a good rule of thumb is to add small quantities and do a taste test. You’ll have to infuse the flavor in the cream by boiling the fresh or dried lavender with cream and then strain the mix after allowing the mix to cool for an hour.
Does Lavender extract contain alcohol?
While alcohol is the most common way to derive and make most herb extracts, there are non-alcoholic extracts also available. In non-alcoholic extracts, the alcohol is replaced with food grade glycerin. Check the packaging to ensure it is gluten-free. Some non-alcoholic extracts may have a sweet taste. Adjust the sweetness accordingly. Non-alcoholic extracts have a shorter shelf life than their alcoholic counterparts, so make sure to check the expiry date on the packaging.
Can I use sugar instead of maple syrup for making ice cream?
You bet! In my opinion, the use of maple syrup work better in ice creams making the ice cream richer with it’s nutty and caramel flavor. However, if you prefer adding regular white granulated sugar instead, refer to this link on adjusting the ratio as the level of sweetness varies.
What kind of oat milk is best for Lavender OAT milkshake?
Most cafes use Barista oat milk in their milkshakes for a rich creamy taste. However, for this lavender oat milkshake regular GLUTEN-FREE Oat milk (love it! as it is cheaper ;)!) also works since we are using our rich and creamy ice cream.

Step by step instructions for making lavender ice cream
Preparation:
- Make sure all the ingredients (cream base, maple syrup and lavender extract) are chilled. Take out the ingredients once you’re ready to start.
- Set up the ice cream maker according to the instructions on a level surface. Ensure good air flow around the ice cream maker.
- Store an airtight container in the freezer. This minimizes formation of moisture due to the temperature difference in the transfer process.
Make the ice cream mix:
- In a large mixing bowl, add heavy whipping cream, half and half and maple syrup. Mix well using a whisk or a hand blender.
- Add in a tsp a lavender extract. We are looking for a beautiful floral flavor. Do a taste test to check the sweetness level and the taste of lavender.
- Be careful not to add too much of lavender extract.
Making the ice cream:
- Add the paddle attachment, and pour the ice cream mix in the ice cream maker. Turn on the ice cream maker and set for 30 minutes.
- After about 25 minutes, check the readiness, and churn for an additional 5-10 minutes if the ice cream needs more time to set.
Freezing, Storing and Serving:
- Turn off the ice cream maker, transfer the contents into the chilled container.
- Freeze for at least 4-6 hours or overnight to enjoy your delightful floral treat!
- Store in an airtight container and enjoy for 6-8 weeks making sure the ice cream isn’t kept outside to maintain freshness.
