Gluten-Free Bean Vermicelli with Snap Peas and Crispy Tofu
This Vegan and Gluten-Free Bean Vermicelli recipe packed with the goodness of fiber rich snap peas and protein rich Crispy Tofu checks all the boxes for a delicious, easy, and healthy meal.
Vermicelli Vs Regular Noodles
Vermicelli and Noodles are both varieties of pasta. While they are similar in taste, they are different in shape and texture. Vermicelli has a thinner structure when compared to regular noodles. Most commonly available varieties of Noodles and Vermicelli are the ones made from Rice, Wheat, and Mung Beans. Bean Vermicelli is made from mung bean starch and when cooked they have a transparent or glass like structure.
About this Recipe:
- Crispy Tofu: In this recipe, I’ve cooked the Tofu in the air fryer to get a crispy texture, in case you don’t have an air fryer, here are some alternative ways to make Crispy Tofu:
- Stove Top: In a pan, shallow fry the tofu with 3-4 tbsp of vegetable oil for a crispy texture.
- Convection Oven: in a convection oven, cook marinated Tofu on Broil setting for 10-12 minutes.
- Seasoning: Add ¼ cup of tomato ketchup for a tangy twist to this recipe.
- Spice level: The spice level of this recipe is Medium-High, you can adjust the spice level by reducing the number of green chillies.
How to Make Bean Vermicelli?
Ingredients:
- Bean Vermicelli 1 pack
- 1 lb Firm Tofu
Vegetables:
- 1 Spring onion
- 2 cups Snap Peas
- 4-5 Garlic Cloves
- 1 Red Bellpepper
- ¼ Cabbage
- 3 Green Chillies
- 1 inch Ginger
Tofu Marinade:
1 tsp Kashmiri Lal Mirch Powder (Cayenne Pepper)
1 tbsp Soy sause
½ tsp salt
1 tbsp Rice Flour Gluten-Free
1 tbsp Sesame Seed oil
For Seasoning and Stir Fry:
2 tbsp of Sesame seed oil
1 tbsp Oyster sauce (Vegan)
1/2 tsp Salt
11/2 tsp Vinegar
2 tsp Kashmiri Lal Mirch powder
Step by Step Process: Crispy Air Fried Tofu
- Gather ingredients (Pic #1). Drain the water from the Tofu and gently squeezing the tofu, remove excess water. Lightly pat the Tofu with a paper towel.
- Cut the Tofu into ½ inch cubes and spread them on a plate. (Pic#2)
- Add in the Kasmiri lal mirchi powder, salt, and soy sauce. Gently mix rub this mixture on to the Tofu taking care not to break the pieces. (Pic#3)
- Add in sesame oil and mix.
- Set the Air Fryer on “Air Fry” Snacks mode: Temp 400 F. (Pic#4)
- Lightly grease the Air Fryer tray and place the tofu pieces. (Pic#5)
- Place the tray in the air fryer. After 5 minutes, turnover the tofu pieces and cook for another 3 minutes at Air Fryer Snacks Mode. (Pic#6)
- Take out the tofu and set aside.
Step by Step Process: Veggie Prep
- Wash the green chillies, remove their stems and cut into small thin slices.
- Chop the Snap peas into ½ inch pieces. (Pic#7)
- Wash the Bell pepper, Cabbage, and Spring Onion. Chop Bell pepper, separate the white portion of the spring onion and the green stem. Chop them separately. (Pic#8)
- In a small blender jar, add peeled garlic cloves and ginger and grind into a paste. (Pic#9)
Step by Step Process: Stir Fry
- In a large wok, on medium-high heat, add sesame oil. As the oil gets warm, add in chopped green chillies and the ginger garlic paste and the white portion of the spring onion. Cook for about 1-2 minutes. (Pic#10)
- Add in the cabbage and snap peas. Cook for 1-2 minutes.
- Add in Oyster sauce, Vinegar, Kashmiri lal mirch powder and ½ tsp salt. Cook for about a minute. Add in chopped red bell peppers and mix. Cook for 1 minute.
- Add the air fried tofu and mix. (Pic#12)
- Turn off heat. Garnish with chopped spring onion stem.
Step by Step Process: How to Cook Bean Vermicelli
- In a large pot, boil 4 glasses of water. Add ¼ tsp salt.
- Add in 1 pack of Bean Vermicelli. (Pic#14)
- After 2-3 minutes, with a fork, gently separate the vermicelli, cook for 5 minutes.
- Turn off heat, strain the vermicelli and wash with cold water. (Pic#15)
Step by Step Process: The Final Assembly
- In a serving dish, make a bed of bean vermicelli and add 2-3 servings of your stir fried tofu and veggies.
- Garnish with Red chilli flakes and chopped spring onion stems.
