- 1 lb Firm Tofu Gluten-free
- 1 medium Sweet Potato
- 1 cup Frozen Peas
- 1 Long Sweet Chili Pepper
- 1 tbsp Red Chilli flakes
- 1 tsp Soy Sauce Gluten-free
- 1 tsp Rice Vinegar Gluten-free
- 1 tsp Salt
- 1 tsp Garlic Powder
- 3 Cakes Millet and Brown Rice Ramen Gluten-free
- 1 tbsp Sesame Oil
Preparation
Microwave the Sweet Potato for 2 minutes or until a little soft. Peel and dice the sweet potato into cubes.
Slice off the stem of the long chilli pepper and remove the seeds. Chop the long chilli pepper into roughly 1/2 inch pieces.
Wash and soak a cup of frozen peas in hot water.
Remove water from the Tofu and cut it into approximately 1/2 inch cubes.
Cooking Ramen
I used Millet and Brown Rice Ramen Noodles from Lotus Foods for this recipe. Bring about 4-5 cups of water to a boil and add the Ramen cakes. After about 1 minute, start separating the noodles gently with a fork and reduce heat to low. Cook for 3-4 minutes or until the noodles are just soft. Strain and rinse with cold water to avoid sticking.
Magical Saute
In a wok on medium heat, add the sesame oil, stir in the cubed sweet potatoes. Add half of the salt and then stir in the cubed tofu. Saute for about 2 minutes.
Add the soy sauce, vinegar and garlic powder. Stir for about 1 minute, taking care not to break the tofu pieces.
Add in the chopped chilli pepper and strained peas. Add 3/4 cup hot water and a quick taste test for salt.
Add in the cooked Ramen. Mix in Red chilli Flakes for a spicy kick. Your scrumptious wholesome Gluten-free Tofu Ramen dinner is ready. Enjoy!
