While buying Granola bars, the most important thing to remember is given that not all Granola bars are gluten-free, you should pay careful attention to the packaging information. Oats are naturally gluten-free but processing them with wheat may contaminate oats and oat products. This recipe uses Gluten-Free Sprouted Rolled oats sold at Costco.
What are the benefits of Gluten-Free Granola Bar?
This Gluten-free granola bar is made with a fiber rich nuts like almonds and pistachios, and only contains sugar from the dates, cranberries and raisins making it a sumptuous breakfast option. The use of flaxseeds in the recipe makes it great for digestion. The magical combination of roasted nuts and oats not only has a delightful taste but also keeps you full longer.
How to Make Gluten-Free, Vegan Granola Bar?
About this Recipe
This is a fun, flexible recipe with a lot of room to swap out ingredients with any nuts and sweeteners of your choice. Let me walk you through the ingredients I’ve used:
- Organic Sprouted Rolled Oats: This is both the base and star ingredient of this recipe. The use of organic oats assures you you’re not consuming the pesticides usually found in non-organic products. Sprouted oats are easier to digest and hence lead to quicker absorption.
- Nuts: I used a total of about 1.5 cups of nuts in this recipe. You may also reduce it to 1 cup if you prefer your bars to have fewer nuts. The use of fewer nuts also aids in binding.
- Fat: The only fat used in this recipe is Cold Pressed, Organic, Additive free coconut oil from Costco. You may substitute it with peanut butter with the same proportion.
- Sweeteners: This recipe has No added sugar. I’ve used a combination of pitted Medjool dates, Cranberries and Raisins. You may use honey/ syrup per your preference.
- Flavor: I’ve only used freshly ground nutmeg for flavor. You can add cinnamon, all-spice, cardamom or vanilla per your taste. You can also try the recipe recipe with different flavors each week.
What Ingredients do I need to Make Gluten-Free Granola Bars at Home?
Ingredients:
- Oats: Sprouted Rolled Oats
- Nuts: Almonds, Peanuts, Pecans, Peanuts, and Pistachios
- Medjool Dates, Dried Cranberries, and Raisins
- Cooconut Oil
- Ground Nutmeg
Step by Step process:
Preparation:
- Dry roasting the oats and nuts perfectly is a key step in this recipe. I roasted the oats and all the nuts except pistachios and pecans in the oven at 325 deg F. (Pic#1)
- Once roasted, let the almonds and peanuts cool and then crush/ chop them roughly. (Pic# 2 and 3)
- Remove the pits from the medjool dates, by slicing them from the middle. (Pic#4)
- In a grinder, add in the pitted medjool dates, cranberries, and raisins with about 1-2 tbsp of coconut oil and make a paste. (Pic#5)
- In a large mixing bowl, add in the roasted oats, roasted and crushed nuts Pic#6
- Add in the nutmeg powder, salt and some coconut oil. (Pic#7)
- Add in the medjool date, cranberries and raisins paste. (Pic#8)
- Knead together binding all of the ingredients into a dough. (Pic#9). I admit, this step is a little bit of a workout, but it is totally worth it.
Baking your Gluten-free Granola Bars
- Preheat oven 375 deg F.
- Grease a baking tray with some coconut oil and put parchment paper on the tray.
- I placed some dough in the parchment paper and flattened it out using a rolling pin. Then I removed the uneven edges and placed the somewhat rectangular shaped dough on the baking tray. (Pic#10)
- Place in the oven and bake for about 20-25 minutes or until the top is glossy and the crust has a beautiful golden brown color. (Pic#11)(Pic#12)
- Take the bars out of the oven and let them cool on a wire rack for 15-20 minutes.
- Your delicious and wholesome Gluten-Free Granola Bars are ready!

Nuts
- ½ cup Almonds
- ½ cup Raw Peanuts
- ¼ cup Pecans

- ¼ cup Green Raisins
- ¼ cup Dried Cranberries

- ⅓ cup Coconut Oil Cold Pressed, Organic
Others
- ¼ cup Flax seeds Roasted and ground
- ¼ tsp Salt

- 1 tsp Ground Nutmeg

Preparation
- Preheat oven to 325 °F and bake the oats and all the nuts except pistachios and pecans in the oven for 12-14 minutes.
- Let the nuts cool for about 10 minutes, then roughly chop/ crush the roasted almonds and peanuts.
- Remove the pits from the medjool dates, and put in a blender with cranberries, raisins and ¼ tsp coconut oil to make a paste.
- In a large mixing bowl, add in the roasted oats, roasted and crushed nuts, paste with raisins (from the previous step). Add in the nutmeg powder, salt and 2 tbps coconut oil.
- Knead together binding all of the ingredients into a dough.
Baking
- Preheat oven to 375 °F
- Grease a baking tray with some coconut oil and put parchment paper on the tray. Flatten out the dough on the baking tray with a small bowl or with a rolling pin. (refer to the pictures).
- Place in the oven and bake for about 20-25 minutes or until the top is glossy and the crust has a beautiful golden brown color.
- Remove from the oven and let the bars cool on a wire rack for 15-20 minutes.
