This simple recipe combines deliciously roasted rolled gluten-free oats, crushed nuts, flax-seeds, uses only dates, cranberries and raisins as sweeteners - NO SUGAR Added and gives you deliciously baked Gluten-free, Vegan Granola Bars!
Preheat oven to 325 °F and bake the oats and all the nuts except pistachios and pecans in the oven for 12-14 minutes.
Let the nuts cool for about 10 minutes, then roughly chop/ crush the roasted almonds and peanuts.
Remove the pits from the medjool dates, and put in a blender with cranberries, raisins and ¼ tsp coconut oil to make a paste.
In a large mixing bowl, add in the roasted oats, roasted and crushed nuts, paste with raisins (from the previous step). Add in the nutmeg powder, salt and 2 tbps coconut oil.
Knead together binding all of the ingredients into a dough.
Baking
Preheat oven to 375 °F
Grease a baking tray with some coconut oil and put parchment paper on the tray. Flatten out the dough on the baking tray with a small bowl or with a rolling pin. (refer to the pictures).
Place in the oven and bake for about 20-25 minutes or until the top is glossy and the crust has a beautiful golden brown color.
Remove from the oven and let the bars cool on a wire rack for 15-20 minutes.
