What is Tutti Frutti ice cream made of?
This flavor of ice cream has existed for over a century and a half! “All the fruits” is the literal translation of this Italian word. There are several versions of this ice cream flavor with varying combinations of candied, fresh, frozen, diced, and blended fruits. The choice of fruits also varies widely. You’ll find versions of this ice cream with a vanilla base and chopped fruits mixed in, and then there are versions (like this recipe) that use a compote for the base. The use of raw papaya based fruit candy is very popular in India. These come in a variety of vibrant colors and are popularly used as toppings in desserts like fruit cake, fruit custard to enhance the visual appeal and add an interesting texture to the dish.
What fruit flavors are in Tutti Frutti?
Using a combination of sweet and tangy fruits like pineapples, vibrant berries – strawberries, raspberries, cherries, or watermelon are some of the popular choices. You may also find some recipes with bananas, peaches, apricots and lemon.
Can I make this recipe (tutti frutti) vegan?
Absolutely! The star ingredients – raspberry compote and tutti frutti (candied raw papaya) are vegan and gelatin free! You can easily substitute the milk and cream with vegan substitutes – Coconut cream, oat milk or cashew milk. You can also use a thickening agent like cornstarch to thicken the base. Can I make this ice cream without an ice cream maker?
If you are not using an ice cream machine, here are a few tips and tricks to get the smooth, creamy texture that we all want in our homemade ice cream:
- Fat content: The use of high fat content in the ice cream base is absolutely essential to getting a smooth base as it minimizes crystal formation. If you use low fat milk, the ice cream will become icy upon freezing. Make sure to use cream with 36% fat content mixed with high fat milk with at least 16-20% fat content.
- Chill ingredients: Chill the ingredients and take them out once you’re ready to start making the ice cream. Mixing ingredients at low temperature is key to minimize moisture content during the process.
- Compote instead of fresh fruit: The process of making compote evaporates the moisture from the fruit, thereby keeping your ice cream fresh and creamy longer.
Churning the ice cream mixture: Use a hand blender or a whisk to beat the ice cream mixture to incorporate air into the mix and make the base light and fluffy. This also helps minimize ice crystals.
Use a Cling wrap: While freezing in a container, cover the ice cream mixture with a cling wrap to keep the ice cream fresh and creamy longer.

How to make Tutti Frutti Ice Cream at home?
What ingredients do I need to make Tutti Frutti Ice cream at home?
The ingredients and substitutes for this recipe are:
- Star Ingredient: Candied Raw papaya pieces (tutti frutti), frozen fruit pieces
- Base: High fat Milk/ Cream
- Flavor: Compote made with your choice of fruit or Vanilla essence
- Optional:
- Sweetener: In case you’re not using a compote, add sugar, honey, maple syrup or plant based sugar.
Step by step instructions to make Tutti Frutti ice cream at home
Preparation:
- Make the Raspberry compote. Refer to my Raspberry Ice cream recipe for detailed instructions on making the raspberry compote (Pic#1).
- Chill the raspberry compote for at least 1-2 hours.
- Set up your ice cream machine in a well ventilated area per the instructions of the ice cream make/ model you are using (Pic#2) .
- Make sure the ingredients including tutti frutti are chilled in the refrigerator.
- Freeze an air-tight ice cream container.
- In a mixing bowl add in a generous amount of the star ingredient, tutti frutti. Now, add heavy whipping cream and half and half (Pic#3 & 4).
- Blend in the raspberry compote until well combined. Mix for a uniform distribution of the tiny pieces (Pic#5 & 6).
- Do a quick taste test to check the sweetness level and adjust according to your liking.
Churn in the Ice Cream Machine:
- Set up the container with it’s paddle attachment, then transfer the ice cream mixture into the container (Pic#7). Put on the lid and power on your ice cream machine (Pic#8).
- Choose “Ice Cream” mode and set the timer for 30 minutes. The time may vary based on the ice cream maker you are using. Refer to the instruction manual for timer setting. The ice cream maker starts churning.
- Around the 20 minutes mark, check if the ice cream is of the right consistency. Once the ice cream appears done, turn off the ice cream machine. (Pic#9)
- Take out the frozen container and transfer the contents quickly into the container (Pic#10).
- Freeze for about 4-6 hours or overnight for the ice cream to set.
Without an ice cream machine:
If you’re not using an ice cream machine, blend the ice cream mixture for about 2-3 minutes using a hand blender.
Transfer into a previously frozen air-tight container to minimize temperature difference. Then cover with a cling wrap or aluminum foil to prevent any moisture buildup. Freeze for 6-8 hours.
Serving Suggestion:
This deliciously rich ice cream loaded with candied fruits can be enjoyed as it is without any toppings, however, you may also serve it with some freshly sliced or diced seasonal fruit like strawberries, pineapples or peaches.
