Let’s compare the three most popular types of meats used in burgers- Turkey, Chicken and Beef. Turkey meat is leaner than Chicken, and contains about half the calories. Thawing Ground Turkey

When using frozen turkey for making your patties, make sure to thaw your ground turkey in the refrigerator overnight. After thawing, the meat should be used in 1-2 days. Thawing overnight on the counter is not a good option as there is a danger of bacterial growth. If you’re hard-pressed for time, microwave thawing is a great option.  

Sweet Potato as a Binding Agent

This recipe uses Sweet Potato as a binding agent by leveraging its starchy properties. Sweet potatoes are very high in Vitamin A making them a healthier choice than potatoes. The recipe uses microwaved sweet potatoes, feel free to boil them instead if you’re not comfortable microwaving your veggies. I’ve also used Gluten-Free Rice and Chickpea flours and an egg to render a crispy crust.   

Soy Sauce as a Tenderizer

Adding Soy sauce to meat keeps it tender, helps retain moisture, and adds flavor. Turkey meat on its own is mild so adding soy sauce makes it flavorful. 

Cleaning Ground Turkey

Food Safety experts advise against washing ground meat as the bacteria in raw meat may lead to cross-contamination. The heat in the oven while cooking destroys the bacteria, making it safe for consumption.

Equipment

  • 1 Blender

Ingredients
  

  • 1 lb Ground Turkey Organic
  • 2 tbsp Olive Oil Extra Virgin

Vegetables

  • 1 Medium Sweet Potato
  • 1 Long Chilli Pepper
  • 1 Large Red Onion

For Seasoning

  • 1 tbsp Ginger Garlic Paste
  • ½ tsp Salt Iodized
  • 1 tsp Coriander Seeds
  • 1 tsp Red Chilli Flakes
  • 1 tsp Soy Sauce Gluten-Free

Additional Binders

  • 1 tbsp Rice Flour Gluten-Free
  • 1 Large Egg
  • 1 tbsp Chickpea Flour Gluten-Free

Instructions
 

Veggie Prep

  • Wash the vegetables. Microwave the sweet potato for 4 minutes and let it cool. Peel and set aside.

  • Chop the Red onions and the Long Chilli Pepper.
  • In a small blender, make a paste with 4-5 garlic cloves and half an inch of ginger.

Mix it all Together

  • Grate the Sweet potato, add in the chopped veggies, ground turkey and the seasoning.
  • Add in the Egg, Rice Flour and Chickpea flour.

  • Mix together, taking care not to over-mix. Add in 1½ tbsp of the oil. Shape the mixture into about 1-1½ inch wide patties.

Cooking

  • Set the oven on Broil
  • In a greased baking tray, place the turkey patties about 1 inch apart. After placing all the patties on the tray, lightly brush them with oil.
  • Place the tray inside the oven. After 10 minutes, flip the patties over and again lightly brush them with oil. Cook for about 7-8 minutes. The patties have a golden-brown color.

  • Enjoy the patties in a sandwich with your favorite cheese and Veggies or you could make a burger. This recipe yields 16-18 patties.
