Gluten-Free French Toast with a TWIST! Savory Spinach French Toast

I grew up having Savory French Toasts, seasoned with Indian spices and herbs. It was fascinating that just with the same ingredients – Bread and Eggs, my Mom made these flavorful treats. Savory French Toasts meant 2 things – it was a special morning or we had stale bread 🙂 . I’m delighted to share my Mom’s  recipe with you with a healthy twist – Spinach!

For breakfast, do you crave for something sweet or for a flavorful savory treat? Well, if you have Bread and Eggs and are in a fix whether to make your French toasts Sweet or Savory, I can help expedite your decision making process. 

Calories:

Sweet French toasts have approximately double the calories as their Savory counterpart. So, if you’re counting your calories, it’s better to go for the Savory option.

Fresh Herb Flavors:

Flavor your Savory French toasts with various fresh herbs  – cilantro, parsely, fenugreek leaves with/without grated ginger, chopped green chillies.  

Toppings:

1. I often find it hard to resist using Maple syrup as a topping for my Sweet French Toast which in turn stacks up the calories even further :(. Other popular choices are- Fresh fruits especially berries, powdered sugar or whipped cream.

2. For my Savory French Toast, I’m content just with some good old black pepper and ketchup. Other popular choices include Avocado, yogurt, grated cheese or a sunny side up.

What type of bread is good for French toast?

The Gluten-Free bread I use for making French Toast is “Seven Grains by Franz” (available at Costco). This bread is packed with the goodness of Brown Rice, Sorghum flour, and tapioca. You may choose any Gluten-Free bread that is pliable. For French toast, Dry bread works better as it soaks up the batter better. I usually make French Toast with Bread that has been in the Frefigerator for 4-5 days. In case you’re making French Toast with fresh bread, leave it in an Air Fryer oven on Toast setting for 4-5 minutes.

How to Make Gluten-Free Savory French Toast?

Follow these simple steps to make your delicious treat! 

  1. For this recipe, I used 6 slices of bread, 4 eggs, and a cup of baby spinach. 
  2. Wash the spinach thoroughly in cold water and chop into small pieces. Set aside.
  3. In a bowl, Crack the 4 large eggs, add in 3/4 tsp salt, 1 tbsp crushed black pepper and coriander seeds,  1 tsp red chilli flakes, and 1/4 cup Tomato Ketchup. Typically French toast recipes use milk, I used Tomato ketchup instead to act as the binding agent for the custard. Whisk together the ingredients.
  4. Add in chopped spinach. You can also add chopped cilantro and green chillies for additional flavor.  Mix well.
  5. In a shallow pan on medium heat, add 2-3 tbsp of vegetable oil. Cut the Bread slice diagonally and dip both halves into the batter making sure both sides are covered well.
  6. Gently place the pieces into the pan, taking care not to dip your finger into the hot oil.
  7. Cook for about 1.5-2 minutes and then flip over. Cook the other side for about 1 minute. The sides will turn golden brown and crispy.
  8. Place them on an absorbent kitchen towel to soak up the excess oil.

Ingredients
  

  • 6 Slices Gluten-Free Bread Seven Grain (pliable)
  • 4 Large Eggs Organic, Cage-free
  • 1 cup Baby Spinach
  • 3-4 tbsp Vegetable Oil for Frying

Spices and Seasoning

  • ¼ cup Tomato Ketchup Gluten-Free certified
  • ¾ tsp Salt Iodized
  • 1 tbsp Coriander seeds
  • 10-15 Black pepper corns
  • 1 tsp Red chilli flakes

Instructions
 

Seasoning Prep

  • Coarsely grind/ crush together coriander seeds and Black peppercorns

Veggie Prep

  • Wash the spinach in cold water. Chop into small pieces and set aside.

The Batter

  • In a Large mixing bowl, crack the eggs. Mix together with salt, 1 tbsp of crushed peppercorns and coriander seeds, and ketchup.
  • Stir in the chopped spinach and mix well.

Frying

  • Cut the bread slices diagonally. Dip the slices in batter, making sure they are coated well with the batter on both sides.
  • In a shallow pan on medium heat, add 3-4 tbsp of vegetable oil. Carefully place the bread slices making sure they're flat on the pan. Cook for 1-2 minutes.
  • Flip it over and cook until golden brown. Take out the delicious treat and enjoy with some Ketchup or chopped onions or a sunny side up!
