Coarsely grind/ crush together coriander seeds and Black peppercorns
Veggie Prep
Wash the spinach in cold water. Chop into small pieces and set aside.
The Batter
In a Large mixing bowl, crack the eggs. Mix together with salt, 1 tbsp of crushed peppercorns and coriander seeds, and ketchup.
Stir in the chopped spinach and mix well.
Frying
Cut the bread slices diagonally. Dip the slices in batter, making sure they are coated well with the batter on both sides.
In a shallow pan on medium heat, add 3-4 tbsp of vegetable oil. Carefully place the bread slices making sure they're flat on the pan. Cook for 1-2 minutes.
Flip it over and cook until golden brown. Take out the delicious treat and enjoy with some Ketchup or chopped onions or a sunny side up!
