Add in the chopped vegetables. Then, add the spices- garlic powder, fenugreek leaves, red chilli powder, coriander powder, crushed black pepper and salt.
Crack both eggs into the mix and mix well.
Add in Tomato ketchup and vegetable oil. Add Rice flour and mix well.
Broiling
Brush a baking tray with oil. Scoop out a tablespoon of the mix and place it onto the greased baking tray, gently flattening the cutlet with the back of the spoon.
Using a brush, coat the cutlets lightly with oil.
Set the oven on Broil setting, and the timer for 15 minutes.
Place the tray in the center of the oven.
After 15 minutes or once the tops of the cutlets look golden brown flip the cutlets.
Place in the oven for another 5-6 minutes or until the tops look done. Turn off the oven and let the tray remain inside for 2-3 minutes.
